Jean Foillard
A benchmark for quality natural wines in Beaujolais.
Jean Foillard took over the family domaine in 1980 alongside his wife Agnès, at a pivotal moment for Beaujolais. While much of the region was moving toward high-yield, commercially styled wines, Foillard chose a radically different path, inspired by the teachings of Jules Chauvet, pioneer of traditional, low-intervention winemaking.
Together with Marcel Lapierre, Jean-Paul Thévenet and Guy Breton, Foillard became part of the group later known as the “Gang of Four”: vignerons committed to restoring authenticity to the crus of Beaujolais. His philosophy was rooted in old vines, organic farming, late harvesting at full phenolic ripeness, rigorous grape selection, and minimal or no use of sulphur. Chaptalisation and filtration were rejected, with the aim of allowing Gamay to express its origin with precision and integrity.
Today, Jean Foillard is regarded as one of the most respected producers of Morgon and Fleurie, a true reference for the wines of Beaujolais.
The Vineyards
The estate covers approximately 14 hectares, with the majority of parcels located on the Côte du Py, the emblematic hillside of Morgon overlooking Villié-Morgon. This elevated site, composed of granite and schist soils over an alluvial fan, is one of the most prestigious terroirs in Beaujolais.
The vineyards are certified organic and cultivated without herbicides or synthetic pesticides. Many parcels are planted with old-vine Gamay, naturally limiting yields and enhancing concentration. Harvesting is carried out entirely by hand, followed by strict sorting to ensure that only perfectly healthy grapes enter the cellar.
Winemaking Philosophy
Jean Foillard’s approach in the cellar mirrors the restraint practiced in the vineyard. Fermentations are carried out with indigenous yeasts, with no addition of SO₂ during vinification. The wines are neither chaptalised nor filtered, preserving texture and aromatic purity.
Ageing takes place in used Burgundian barrels sourced from prestigious domaines. The use of older oak allows for subtle micro-oxygenation and structural refinement without imparting dominant wood flavours.
The resulting Morgon and Fleurie are deep, structured and distinctly mineral wines, combining tension, spicy nuances and a silky texture. While approachable in their youth, they possess the balance and architecture for extended bottle ageing. Foillard’s wines stand apart from the lighter, fruit-forward Beaujolais styles associated with carbonic maceration, offering instead precision, complexity and remarkable structure.
