Domaine Hubert Lamy
Purity and precision from the terroir of Saint-Aubin
Olivier Lamy is a passionate vigneron from Saint-Aubin who continues a family winemaking tradition dating back to 1640.
With previous experience at the prestigious Domaine Méo-Camuzet in Vosne-Romanée, Olivier applies exceptional technical and empirical knowledge to capture the full essence of his terroirs in Saint-Aubin, Chassagne-Montrachet, and Puligny-Montrachet.
His wines are renowned for their purity, depth, and a distinct mineral tension that faithfully reflects the character of each vineyard site.
The Vineyards
The domaine covers around 18.5 hectares, mainly across Saint-Aubin, Chassagne-Montrachet, and Puligny-Montrachet, planted with 80% Chardonnay and 20% Pinot Noir.
The soils are predominantly stony and limestone-based, with thin layers of topsoil between 10 and 30 cm, and favorable southeast exposures that ensure balanced ripening.
Olivier practices sustainable, organically inspired viticulture, using Guyot Poussard pruning, manual de-budding, and natural ground cover.
One of his most remarkable innovations is high-density planting (haute densité), reaching up to 30,000 vines per hectare — an exacting technique that encourages natural competition between plants and yields a more concentrated expression of the soil.
Among his most emblematic parcels are the Saint-Aubin Premiers Crus Derrière Chez Édouard and En Remilly, while the jewel of the estate is the tiny 0.05 ha plot in Criots-Bâtard-Montrachet Grand Cru.
Winemaking Philosophy
In the cellar, Olivier Lamy combines traditional methods with a forward-thinking approach. He was one of the first in the Côte de Beaune to use larger barrels (350 and 600 L), achieving a slower, more precise maturation with very moderate use of new oak (0–15%).
The white wines are gently pressed, fermented with indigenous yeasts, and aged for 24 months on the lees, followed by six months of refinement in tank.
The red wines are made with 50–100% whole clusters, undergo spontaneous fermentation, and receive similar aging.
The result is a collection of pure, tense, and mineral wines of great aromatic precision, elegantly capturing the energy of their terroir.
