Sylvain Pataille is one of Burgundy’s benchmark producers and a leading figure in Marsannay, the northernmost appellation of the Côte de Nuits. He founded his domaine in 1999 while working as a consulting oenologist, quickly earning a reputation for his precision and dedication.

Together with his brother Laurent, he now manages 15 hectares of certified organic vineyards farmed biodynamically, with low yields and horse-drawn ploughing on select plots.

Trained in Beaune, Pataille combines technical mastery with deep intuition for terroir. His guiding principle is that every cuvée deserves the same care and precision, whether a simple Bourgogne or a single-vineyard wine.

In the cellar, Pataille follows an artisanal and highly intuitive approach. Fermentations are carried out with indigenous yeasts, often including partial whole-cluster vinification and extended macerations. There is no fixed formula—each wine dictates its own rhythm.

Ageing typically lasts 15 to 24 months, depending on the vineyard and vintage. Sulphur use is minimal, restricted to bottling, and the wines are neither fined nor filtered.

The resulting wines are pure, precise, and expressive, marked by freshness, fine structure, and seamless balance. His Aligotés are mineral and vibrant; his Pinot Noirs among the most elegant and distinctive of northern Côte de Nuits.
