René et Vincent Dauvissat

An absolute icon of Chablis.

Vincent Dauvissat is one of the most prestigious producers in Chablis, where his family has been bottling wine under their name since 1931. Vincent joined his father René in 1976 and today leads the domaine, widely regarded as one of the benchmark estates of the region.

The domaine’s holdings include two Grand Cru sites —Les Clos and Les Preuses— as well as four Premier Cru vineyards —Séchet, Vaillons, Montmains, and the renowned La Forêt (“La Forest”)— whose quality in top vintages can rival that of the grands crus. Dauvissat also produces Chablis and Petit Chablis in very limited quantities, making them highly sought after.

Vineyard work is meticulous and respectful of nature: hand-harvesting, whole-cluster pressing, and spontaneous fermentations. In the cellar, Vincent avoids bâtonnage and ages his wines in 6- to 8-year-old barrels, providing structure and depth without imposing oak character on the aromatics.

Dauvissat’s wines are highly structured and can be tight and even closed in the early years after bottling. However, with proper aging—often 10 to 15 years—they reveal their full potential.

The Vineyards

The domaine’s vineyard holdings are among Chablis’ finest: two Grand Crus —Les Clos and Les Preuses— and four top-tier Premier Crus: La Forêt, Séchet, Vaillons, and Montmains. La Forêt is widely regarded as a “hidden grand cru,” thanks to its south-facing exposure, clay-rich Kimmeridgian soils, and a high proportion of old vines averaging 40 years of age.

Viticulture is natural and low-intervention, with extremely limited treatments and strict hand-harvesting across all sites. Their Chablis and Petit Chablis come from exceptional plots adjacent to Les Clos and opposite La Forêt, giving these wines density and aging potential far beyond their appellation norms.

Winemaking Philosophy

Dauvissat employs a traditional winemaking style that has evolved subtly across generations while preserving its core philosophy. Grapes are pressed whole, fermentations occur spontaneously, and the wines age in a mix of enamel tanks and six- to eight-year-old barrels. Oak plays a structural role, allowing the wines to breathe and gain texture without imparting overt oak character. No bâtonnage is performed, and malolactic fermentation happens naturally.

The resulting wines are dense, mineral and firmly structured, often austere when young but capable of developing for 10 to 15 years, revealing depth and complexity that place Dauvissat among the world’s greatest Chardonnay producers.
